These Chocolate Chip Cookies are simple to make and healthier than your average chocolate chip cookie!

First, I will give you a tip –
I tried placing a square of dark chocolate on top after the cookies baked, after allowing it to melt, I drug a toothpick through it to make a spider. The problem was TOO MUCH CHOCOLATE! Now I know that sounds a little goofy, but really it was too much chocolate and it didn’t make a good spider. So, you will want to use a single chocolate chip in order to make a cool looking spider.
The funny thing about this recipe is that it is my mother’s recipe, I just veganized it. I remember when she gave it to me a few years ago, its on a laminated recipe card that she hand wrote and attached it to a couple dozen cookies.
My husband was excited because he loves cc cookies, however when he bit into them he was anything but excited.
They were hard and super crispy, not the usual chewy, gooey cookies we had come to love. She couldn’t figure out what the problem was and it wasn’t until after her death that I figured it out.
She forgot the baking soda!
The next time I made the cookies, I followed her recipe AND added the baking soda back in, so I assumed it would be fantastic. However, I soon discovered she didn’t write SOFTENED butter and I put it in cold as you would a pie crust.
UGH! That’s what I got for following the recipe. My husband jokes that my mother couldn’t write one and I can’t follow one, because I tend to do my own thing using the recipe as a loose guideline.
Anyway, I have perfected and veganized (made it healthier) this chocolate chip cookie recipe and I know you will enjoy it.
Chocolate Chip Cookies Ingredients
2 1/4 cups flour – use whatever flour you prefer
1 tsp baking soda
1/4 tsp salt
1/2 cup sugar or 1/2 tsp pure stevia
1/2 cup brown sugar or 1/2 tsp pure stevia
2 sticks vegan butter, softened
1 tsp vanilla
2 eggs – vegan egg substitute
4.5 oz dark chocolate chips
Chocolate Chip Cookie Directions
- Place the first 5 ingredients in a large mixing bowl and whisk together.
- Add softened vegan butter, vanilla, and egg substitute.
- Add dark chocolate chips and nuts (if desired), fold in gently.
- Drop by spoonfuls onto cookie sheet.
- Bake 375 degrees for 9 – 12 minutes.
- Remove from oven. Place a chocolate chip on top and gently press it into the cookie.
- Allow it to melt and then drag a toothpick through it making 6 – 8 spider legs.
- Place cookies on cooling rack. Cool and enjoy!
