Healthy Homemade Corn Tortillas

Do you love the taste of corn? Have you ever thought about making your own corn tortillas? Probably not, but I’m here to tell you it’s SO EASY!  Besides the ease is the TASTE, it’s incredible!

When I was morbidly obese, I loved those hard crunchy taco shells in a box. I have no idea why, but I’m sure it had something to do with the greasy meat, cheese, and sour cream with which I filled them.  Now that I know better, I make my own tortillas and fill them with delicious, nutritious, and animal-friendly things like jackfruit, seitan, or mushrooms. I can control the amount of sodium, fat, and calories, plus I love that I’m not ingesting all of the crud in those hard store-bought shells.

Are Corn Tortillas Bad For You?

Corn tortillas contain corn, which is a whole grain, so they are typically lower in calories than white flour tortillas. This is especially helpful if weight loss is your goal.

What Are Corn Tortillas Made Of?

You will need a special corn flour called Masa Harina for making corn tortillas. Masa harina is corn flour that has been treated with lime which makes it more nutritious by releasing the niacin in the corn.

Healthy Homemade Corn Tortillas

A healthy homemade corn tortilla recipe that is packed with flavor and simple to make.  These tortillas can be frozen, so you can always have gluten free, low calorie tortillas on hand!

Ingredients

  • 2 cups masa harina
  • 1 1/2 cups hot water
  • 1/2 teaspoon salt
  • squeeze of lime juice

Instructions

  • In a large bowl, mix salt and masa harina together. Pour 1 1/2 cups water into the mixture and stir until a ball forms. The dough will feel firm and springy. 
  • Preheat skillet on medium-high heat.
  • Form a golf ball sized ball of dough. Place between plastic wrap or parchment paper and flatten using a tortilla press. 
  • Gently remove the tortilla from the press and cook in hot skillet for 30 seconds to 1 minute. Flip and cook the other side for 30 seconds to 1 minute.
  • Place cooked tortillas between a cloth napkin or a tortilla warmer to keep warm. Repeat method until all the dough is gone. Enjoy!

Don’t have a Tortilla Press? Here’s the one I use and recommend.

 You don’t have to have a press, but it makes it so much easier. You could flatten with a rolling pin, however it is very challenging to get it the same thickness throughout.
