Now that I know that frozen French toast and French toast sticks are loaded with ingredients like DATEM, preservatives like monoglycerides, saturated fat, and bioengineered ingredients, I make my own and it is delicious.

Sometimes egg replacers like Just Egg or flax eggs can cause the french toast to be gooey or gritty. I suggest using bananas and be sure your bread is stale for the ultimate vegan french toast.

- Almond milk – you can use any plant-based milks like cashew milk, soy milk, or oat milk.

Add pieces of bread to a baking dish and pour the banana mixture over them. Cover and place in the refrigerator for 4 hours or overnight.
The next morning, preheat the oven to 350 degrees. Meanwhile, melt vegan butter in a saucepan. Add sugar and whisk until dissolved. Cook until mixture is brown and caramel-like. Add nuts, spices, and salt.
Spread pecan mixture over the top of the casserole and bake for 35-40 minutes or until golden brown. Serve with a drizzle of maple syrup and fresh fruit.

The Ultimate Overnight Vegan French Toast Casserole
Ingredients
- 1 french baguette, stale and torn into large chunks
- 2 bananas, ripe
- 1 1/2 cups almond milk
- 1 cup pecans, chopped
- 3/4 cup coconut sugar or brown sugar
- 1/3 cup vegan butter
- 2 Tbsp cornstarch
- 1 tsp vanilla extract
- 1 tsp ground cinnamon
- 1/4 tsp nutmeg
- 1/4 tsp cloves
- 1/4 tsp ground ginger
- 1 pinch salt
Instructions
- Blend bananas, almond milk, cornstach, cinnamon and vanilla in a blender until smooth.
- Grease a 9×13 pan and place the torn bread into the baking pan. Pour the banana mixture over the bread and press to make sure all of the chunks are in the mixture. Cover and place in the fridge for 4 hours or overnight.
- The next day, preheat oven to 350 degrees.
- In a medium saucepan over medium heat, melt the vegan butter. Add sugar and whisk until dissolved and cook about 5 minutes until mixture is brown and caramel-like. Add pecans, nutmeg, cloves, ginger and salt.
- Spread pecan mixture over the french toast mixture and bake for 40 minutes or until golden brown.
