Epic Green Bean Casserole Appetizer Recipe

These Mini Green Bean Casserole Bites offer a delicious variation to the usual holiday side dish. Serving them in individual phyllo cups adds a crunch to the creaminess of classic green bean casserole, making them the perfect appetizer.

  • Prepare the vegan green bean casserole if you aren't using leftovers.
  • While it is baking, begin to create phyllo cups by laying one sheet of thawed phyllo dough on a cutting board. Lightly brush olive oil over the dough, and then layer another sheet on top. Repeat this process for a total of 5 sheets. 
  • Use a pizza cutter or knife to cut the layered dough into circles. Press each circle into a mini muffin pan cup, creating 24 pastry cups. 
  • Bake in a 350-degree oven for 9-10 minutes or until they achieve a light golden brown color; be careful not to overbake since they will return to the oven after filling.
  • Once done, scoop the green bean mixture into the pastry cups and top with fried onions. Bake for an additional 5 minutes. Serve warm and enjoy!
