Soak dates in hot water for 5-10 minutes to soften and set aside.
Combine oats, chia seeds, and unsweetened coconut flakes to a food processor and pulse until you reach your desired consistency and set aside. Skip this step if you like chunky energy bites.
Place dates and 1 Tbsp of date water to a food processor and pulse until smooth, scraping down the sides if necessary. Add additional water if necessary.
Add date paste, nut/seed butter, naturally sweetened dried cranberries and vanilla to oat mixture and stir to combine.
