Naturally Sweetened Energy Bites

These no-bake naturally sweetened energy bites are going to be a hit with your family. They are chocked full of wholesome ingredients that will keep you energized.

Ingredients

  • 10 medjool dates, pitted
  • 1 cup old fashioned oats
  • 1/2 cup nut/seed butter
  • 1/4 cup chia seeds
  • 1/4 cup unsweetened coconut flakes
  • 1/4 cup naturally sweetened dried cranberries
  • 1 Tbsp water
  • 1 tsp vanilla extract

Instructions

  • Soak dates in hot water for 5-10 minutes to soften and set aside.
  • Combine oats, chia seeds, and unsweetened coconut flakes to a food processor and pulse until you reach your desired consistency and set aside.  
    Skip this step if you like chunky energy bites. 
  • Place dates and 1 Tbsp of date water to a food processor and pulse until smooth, scraping down the sides if necessary. Add additional water if necessary.
  • Add date paste, nut/seed butter, naturally sweetened dried cranberries and vanilla to oat mixture and stir to combine.
  • Form dough into walnut-sized balls.
  • Refrigerate in air tight container.
