Best Ever Vegan Chocolate Chip Cookies

Ingredients

  • 2 1/4 cups unbleached, all purpose flour
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 1/2 cup vegan butter, softened 1 stick
  • 1/2 cup vegan shortening
  • 1 tsp vanilla extract
  • 2 vegan eggs I used Ener G Egg Replacer
  • 9 oz dark chocolate chips
  • 1/2 cup nuts, chopped optional

Instructions

  • Preheat oven to 375 degrees F.
  • Combine flour, baking soda and salt in a small bowl. Set aside.
  • Beat vegan butter, shortening, sugar, brown sugar and vanilla in a large mixing bowl until creamy. Add vegan eggs and combine.
  • Gradually beat in flour mixture. Gently stir in chocolate chips and nuts (if using). Using a cookie scoop or tablespoon, drop cookie dough onto parchment lined or ungreased cookie sheet.
  • Bake 9-11 minutes or until golden brown. Cool for a few minutes and then remove from cookie sheet and place on wire racks to cool completely. Enjoy!
