The Ultimate Overnight Vegan French Toast Casserole

Ingredients
1french baguette, stale and torn into large chunks
2bananas, ripe
1 1/2cupsalmond milk
1 cup pecans, chopped
3/4 cupcoconut sugaror brown sugar
1/3cupvegan butter
2Tbspcornstarch
1 tspvanilla extract
1tspground cinnamon
1/4tspnutmeg
1/4tspcloves
1/4 tspground ginger
1pinchsalt
Instructions
Blend bananas, almond milk, cornstach, cinnamon and vanilla in a blender until smooth.
Grease a 9x13 pan and place the torn bread into the baking pan. Pour the banana mixture over the bread and press to make sure all of the chunks are in the mixture. Cover and place in the fridge for 4 hours or overnight.
The next day, preheat oven to 350 degrees.
In a medium saucepan over medium heat, melt the vegan butter. Add sugar and whisk until dissolved and cook about 5 minutes until mixture is brown and caramel-like. Add pecans, nutmeg, cloves, ginger and salt.
Spread pecan mixture over the french toast mixture and bake for 40 minutes or until golden brown.
Serve with berries and/or maple syrup. Enjoy!
