The Ultimate Overnight Vegan French Toast Casserole

This Overnight Vegan French Toast Casserole recipe is a rich decadent breakfast that is easy to make. Simple ingredients create a luscious custard mixture that you pour over cubed bread to create a sumptuous overnight French toast casserole the whole family will love. Make it a day ahead and bake it in the morning for the perfect breakfast for the holiday season or any time of year.

Ingredients

  • 1 french baguette, stale and torn into large chunks
  • 2 bananas, ripe
  • 1 1/2 cups almond milk
  • 1 cup pecans, chopped
  • 3/4 cup coconut sugar or brown sugar
  • 1/3 cup vegan butter
  • 2 Tbsp cornstarch
  • 1 tsp vanilla extract
  • 1 tsp ground cinnamon
  • 1/4 tsp nutmeg
  • 1/4 tsp cloves
  • 1/4 tsp ground ginger
  • 1 pinch salt

Instructions

  • Blend bananas, almond milk, cornstach, cinnamon and vanilla in a blender until smooth.
  • Grease a 9x13 pan and place the torn bread into the baking pan. Pour the banana mixture over the bread and press to make sure all of the chunks are in the mixture. Cover and place in the fridge for 4 hours or overnight.
  • The next day, preheat oven to 350 degrees.
  • In a medium saucepan over medium heat, melt the vegan butter. Add sugar and whisk until dissolved and cook about 5 minutes until mixture is brown and caramel-like. Add pecans, nutmeg, cloves, ginger and salt.
  • Spread pecan mixture over the french toast mixture and bake for 40 minutes or until golden brown.
  • Serve with berries and/or maple syrup. Enjoy!
