Chewy, moist and utterly satisfying apple pie protein cookies. They are quick to make with very few ingredients and make a great healthy snack or breakfast.
Line a cookie sheet with parchment paper or grease cookie sheet and set aside.
In a medium mixing bowl, combine applesauce, oats, apple, vanilla, spices, chia seeds, nuts and protein powder. Mix until protein powder is well incorporated.
Drop a tablespoonful and press it down onto the prepared baking sheet, continue and space them about 2" apart. A cookie scoop works well here.
