Combine flour, baking soda and salt in a small bowl. Set aside.
Beat vegan butter, shortening, sugar, brown sugar and vanilla in a large mixing bowl until creamy. Add vegan eggs and combine.
Gradually beat in flour mixture. Gently stir in chocolate chips and nuts (if using). Using a cookie scoop or tablespoon, drop cookie dough onto parchment lined or ungreased cookie sheet.
Bake 9-11 minutes or until golden brown. Cool for a few minutes and then remove from cookie sheet and place on wire racks to cool completely. Enjoy!
