Healthy Chocolate Chip Cookie Pie Recipe

This gooey, chewy, and secretly nutritious deep-dish chocolate chip cookie pie recipe features rich dark chocolate chips in every incredible mouthful.

Ingredients

  • 2 15 oz garbanzo beans, drained and rinsed *Note 1
  • 1 1/4 cup oats
  • 1/4 cup applesauce
  • 1/4 cup nut butter *Note 2
  • 1 1/2 cups golden monk fruit sweetener *Note 3
  • 1 Tbsp vanilla extract
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • pinch salt
  • 1 cup dark chocolate chips

optional

  • 1/4 cup nuts, chopped *Note 3

Instructions

  • Preheat oven to 350℉.
  • Place old-fashioned oats in food processor or high-speed blender and process into a fine powder.  
  • Drain and rinse the beans. Place all ingredients except chocolate chips and nuts into food processor. Blend.
  • Gently stir in the chocolate chips and optional nuts.
  • Pour into a greased 9 or 10-inch springform pan or deep dish pie pan.
  • Bake at 350F for 40-45 minutes until golden brown. To check for doneness, insert a toothpick into the center; if it comes out clean or with only a few moist crumbs, it's ready.
  • Allow to cool for 10 minutes on a wire rack. Serve and enjoy!

*Note 2 - you can use whichever nut or seed butter you prefer - cashew, almond, peanut, or sunflower seed butter. I used almond butter. 
*Note 3 - you can use brown sugar or coconut sugar. I used golden monk fruit sweetener.
