  • White Beans– you can use chickpeas (garbanzo beans), cannellini, or great northern. I used canned beans, but you could substitute cooked beans if you want to use dried instead of canned.
  • Oat Flour: I made my own oat flour by processing old-fashioned oats in a food processor until they were a fine powder.
  • Monk Fruit Sweetener – I used golden sweetener; you could substitute brown sugar or coconut sugar. 
  • Applesauce – you can sub banana if needed.
  • Nut Butter: I used almond butter, but you could use cashew butter, sunflower seed butter, or peanut butter. 
  • Pure vanilla extract – get the best your budget will allow.
  • Baking Powder

  • Salt – a pinch will bring out the sweetness.

How to make a Chocolate Chip Cookie Pie

You can follow this step-by-step guide to make this easy chocolate chip pie.

  • Begin by processing old-fashioned oats in a food processor or high-speed blender until they form a fine powder.

Ingredients

  • 2 15 oz garbanzo beans, drained and rinsed *Note 1
  • 1 1/4 cup oats
  • 1/4 cup applesauce
  • 1/4 cup nut butter *Note 2
  • 1 1/2 cups golden monk fruit sweetener *Note 3
  • 1 Tbsp vanilla extract
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • pinch salt
  • 1 cup dark chocolate chips

Instructions

  • Preheat oven to 350℉.
  • Place old-fashioned oats in food processor or high-speed blender and process into a fine powder.  
  • Drain and rinse the beans. Place all ingredients except chocolate chips and nuts into food processor. Blend.
  • Gently stir in the chocolate chips and optional nuts.
  • Pour into a greased 9 or 10-inch springform pan or deep dish pie pan.
  • Bake at 350F for 40-45 minutes until golden brown. To check for doneness, insert a toothpick into the center; if it comes out clean or with only a few moist crumbs, it's ready.
  • Allow to cool for 10 minutes on a wire rack. Serve and enjoy!
