This homemade pie is one of my favorite recipes and my favorite vegan dessert for summer. You will love making it as a slab pie because it will serve a crowd and there are keto and gluten-free crust options, making it the perfect dessert for Memorial Day, Fourth of July, or any summer barbecue! This creamy Key Lime Dairy Free Cheesecake recipe is a perfect summer dessert, too.

I love the blueberry season and blueberry picking. Plucking those sweet berries right off the blueberry bushes is a fun summer activity for the whole family.

Afterward, I store the fresh blueberries in the refrigerator and grab a handful to enjoy throughout the day, but I also make this delicious pie.

Is Blueberry Pie Healthy?

Before I lost 125 pounds I could have eaten this entire pie in one sitting. Now that I know better, I made this vegan blueberry pie as healthy as possible.

Blueberries are a superfood and are an excellent source of several vitamins, antioxidants and are low in calories. You can read more about the health benefits of juicy blueberries and how wonderful these wild berries are for you.

This healthy pie is sweetened with monk fruit, a low carb sweetener, and is deliciously sweet without white sugar added to the filling. It has a flaky and buttery vegan pie crust and is lower in calories since it only has a bottom crust.

Vegan Pie Crust

You can use store-bought pie crusts for this easy recipe. It’s a great way to save time, however, be sure to look at the ingredients list. Many store-bought crusts contain lard, BHA, and BHT. You can read why you might not want to ingest those ingredients.

If you have time, you will be amazed at how easy it is to make your own crust. Here’s the Easy Vegan Pie Crust Recipe I recommend. You will want to double it if you are making a slab pie. You will want to triple it if you want to add decorations to the top of your pie.

I have a video on how to make vegan pie crust perfectly every time. If this is your first time making pie crust, I suggest checking it out.

No Sugar Added Blueberry Pie Filling

This blueberry slab pie is perfectly sweet with the addition of monk fruit, but you can use the sweetener of your choice. I highly recommend using fresh berries that are in season for the sweetest, juiciest flavor.

Blueberry pie filling ingredients:

  • Blueberries: You can use frozen blueberries, but I suggest fresh ones. The frozen blueberries might add too much moisture and will probably not be as sweet. 
  • Monk fruit sweetener: Use it as a 1:1 ratio for sugar. If you decide to use sugar instead it will be the same measurement as the monk fruit sweetener. You can find monk fruit sweetener in most grocery stores now or here.
  • Cornstarch: You can sub arrowroot powder.
  • Lemon zest: You can sub lime zest. You’ll notice I used lime in the photos.
  • Cinnamon: It gives it a little added flavor and a delicious warmth that pairs well with the blueberries.
  • Non-Dairy milk: I used unsweetened almond milk and a small amount of maple syrup for a vegan “egg” wash.
  • Maple syrup: You can omit this and just use unsweetened plant-based milk for the egg wash.

How to make this sugar free blueberry pie recipe

The full written instructions are found below in the recipe card. However, here’s a brief overview with photos.

1. Start by making the pie crusts first. You will need to double the recipe or buy two pie crusts.

If you want to decorate the slab pie then I suggest tripling the recipe or purchasing three pie crusts.

You do not need to blind-bake the pie crust before adding the blueberry filling.

2. Once you have your pie dough bought or made, roll it to 17×12 inch rectangle.

If you are using store-bought crusts simply unroll and stack the crusts on a lightly floured surface. Roll to 17 x 12 inch rectangle.

Fit crust into ungreased 15x10x1 inch baking sheet, pressing into corners. Do not trim edges. Prick the crust with a fork, including the sides. This will help the crust from becoming soggy and bubbling. Keep chilled until ready to fill.

3. Make the blueberry pie filling. In a large mixing bowl, mix the cups of blueberries, monk fruit sweetener, cinnamon, cornstarch, and lemon zest. Toss gently until well combined.

4. Make the vegan “egg” wash, by combining the non-dairy milk and maple syrup. Set aside.

5. If decorating a slab pie, roll out remaining crust on a lightly floured surface. To make a lattice top, cut 1 inch wide strips with a knife, pizza cutter, or pastry cutter. Alternately, use a cookie cutter to cut shapes.

6. Spoon blueberry pie filling into a crust-lined pan.

7. Decorate top with cut-out shapes, if desired. If making a lattice crust, place half of the strips across pan diagonally. Weave remaining strips with first strips to form lattice. Trim and pinch edges together. Tuck under the crust, if necessary. Flute or crimp edges.

8. Gently brush the crust with “egg” wash.

9. Bake 35-40 minutes or until crust is golden brown and filling is bubbly. Check the pie after baking for 25 minutes, if it is browning too quickly, cover with aluminum foil. Cool completely, about 1 hour.

Troubleshooting & FAQ’s

How do you keep a berry pie from being runny?

The addition of cornstarch should keep your fruit pie from being runny. It has a nice smooth texture without much flavor. Keep in mind it can cause the vibrancy of your pie to become a little murky.

Also, make sure you have baked it long enough, as well as, allowed it to fully cool. Just because the crust turns slightly brown does not mean the pie is fully cooked. If you are concerned about the crust burning, simply cover with aluminum foil.

How do you thicken sugar-free blueberry pie filling?

I prefer to use organic cornstarch to thicken this berry pie. However, you can also use arrowroot powder or all-purpose flour to thicken your pie.

Can I make this sugar-free blueberry pie recipe keto-friendly?

Absolutely! Since the recipe already uses keto-friendly monk fruit sweetener the only change necessary would be the crust. I haven’t tried it, but if you want you can double this recipe for Keto Almond Flour Pie Crust instead.

Can I make this blueberry pie recipe gluten-free?

Of course! Again, I haven’t tried it, but this Gluten-Free Vegan Pie Crust recipe should be a good substitute. Remember to double it for this slab pie.

How long does fresh blueberry pie last in the fridge?

The USDA says fruit pies are food-safe at room temperature for up to two days because they contain plenty of sugar and acid, which retard bacteria growth.

However, always refrigerate leftover pie containing eggs or dairy right away. Fruit pies can be stored either at room temperature or in the refrigerator for up to two days. You can cover them with an overturned mixing bowl.

How many calories and carbs are in blueberry pie?

A typical slice of one-crust blueberry pie has approximately 292 calories and 45 grams of carbohydrates.

This vegan blueberry pie recipe has 217 calories and 28 carbohydrates making it a healthy blueberry pie.

Ingredients

  • 2-3 vegan pie crusts
  • 5 cups fresh blueberries approximately 2.5 lbs
  • 1/2 cup monk fruit sweetener
  • 3 Tbsp cornstarch
  • 1 tsp ground cinnamon
  • 1 tsp vanilla
  • 1 tsp lemon zest
  • 2 Tbsp non-dairy milk
  • 1 tsp maple syrup

Instructions

  • Preheat oven to 400 degrees. Roll pie crust to 17 x 12 inch rectangle. Place crust into ungreased 15 x 10 x 1 inch baking sheet. Press into corners. Prick bottom and sides with a fork.
  • In a large mixing bowl, mix together blueberries, monk fruit sweetener, cornstarch, cinnamon, vanilla, and zest. Spoon into crust-lined baking sheet.
  • If decorating, use the third crust to create a lattice top or cutouts and decorate pie.
  • In a small bowl, mix together non-dairy milk and maple syrup to create a vegan "egg" wash. Stir until combined. Lightly brush crust with vegan "egg" wash..
  • Bake 35-40 minutes or until crust is golden brown and filling bubbles. Check pie after 25 minutes, if browning too quickly cover with aluminum foil. Allow pie to cool completely, approximately 1 hour.

    Perfect timing! I am trying to move to a healthier lifestyle and on the lookout for no-sugar dessert options! Quick question – can i use dates or honey? Monk fruit sweetener may not be available in my country.

    1. Great question! I don’t believe you will achieve the same results with honey or dates. You will need a granular sugar substitute, so stevia would work if you have it. Otherwise, you could use coconut sugar, but it is still a form of sugar. Hope that helps!
