How to Make Shredded Brussel Sprouts Slaw

You can follow these simple steps for this Shredded Brussel Sprouts Recipe:

Clean and Prepare Brussels sprouts: Clean and rinse them under cold running water to remove dirt or debris. Next, with a sharp knife, trim off the tough stem end of each sprout and discard any outer leaves that are yellowed or wilted. You can soak the Brussels sprouts in a bowl of cold water for a few minutes to help remove stubborn dirt or insects hiding in the layers. After cleaning, pat the Brussels sprouts dry with a clean kitchen towel or paper towel to remove excess moisture before cooking. 

Toast pecans: Preheat the oven to 350. Arrange the pecans in a single layer on a baking sheet. Toast the pecans 6-10 minutes until golden brown. Set aside to cool.

Shred sprouts and cabbage: The easiest way to shred the sprouts and cabbage is to use a food processor with a slicer attachment or shredder blade. Cut sprouts in half and cut cabbage into small wedges. Place sprouts in the food processor fitted with the shredder attachment and pulse until finely shredded. Repeat the process with the cabbage wedges. 

Chop vegetables: chop apple and carrot and slice green onions.

Make Vinaigrette: In a mixing bowl, whisk together mustard, maple syrup, vinegar, olive oil, coarse kosher salt, and black pepper. 

Toss together: In a large bowl, toss together Brussels sprouts, cabbage, green onions, carrot, and apple. Drizzle dressing over slaw and toss. Top the entire bowl with toasted pecans, and enjoy!

Substitutions

You could use 1 pounds of Brussels sprouts and omit the cabbage. You could also use pre-shredded brussels sprouts instead of shredding your own.

    This salad looks delicious! I agree, no matter how fast food chain like KFC promotes healthy food and including salad, still not that healthy coz of the other ingredients they used (to cut the costs, of course).
