Jackfruit Verde

Do you love Mexican food?  Who doesn’t?! Are you tired of the same tacos or burritos? Have you ever tried jackfruit? It’s so easy to cook and this Jackfruit Verde is so tangy, fresh and best of all SIMPLE to make!

I know what your wondering —

What is jackfruit?

Jackfruit is a giant fruit that’s often used as a meat substitute. Learn more about the health benefits of eating jackfruit by clicking HERE.

Is Jackfruit nutritious?

Jackfruit is rich in vitamin A, vitamin C, magnesium, vitamin B6 and fiber. It doesn’t have a lot of protein, however it has no cholesterol and very little fat.

What does jackfruit taste like?

Jackfruit, like tofu, will take on the flavor of the seasonings or sauces that you use. It mimics the texture of pork or chicken when its shredded. That’s why I chose to use it in this verde, when traditionally pork is used.

When I weighed nearly 300 lbs, I used to pop the top on a jar of salsa and “cheese” sauce and polish off most of them in one sitting.  Now that I intentionally eat, I make my own salsas and cashew cheese, so I can control the amount of sodium and ingredients. Plus it tastes SO MUCH BETTER!

This Simple Salsa Verde is the underdog in this Jackfruit Verde!

Save yourself some time, make extra salsa and freeze it for a future Taco Tuesday or any night you want to dip a chip. I love these BPA free, Locking Lid Containers for storing leftovers.

If you have time, I HIGHLY recommend making your own Healthy Homemade Corn Tortillas. They have a slightly corny, chewy texture that will make your Jackfruit Verde a meal to remember. Plus, you can freeze the extra tortillas for your next fiesta.
