A dairy-free cheese sauce that is spicy and perfect for all your Mexican inspired meals! Its simple to make and will last up to a week in the refrigerator, so you can have healthy nachos any time you want! 

 

 

Spicy Cashew Cheese Sauce

 

When I weighed nearly 300 lbs, I loved cheese. I mean all cheese. There wasn’t a cheese I didn’t like or at least I never found one.

It wasn’t until a personal training client said she wanted to go dairy free for a month and  I told her I would do it with her. Misery loves company after all.

IT WAS TERRIBLE! I wanted cheese SO BADLY!

Then after two weeks it happened. The cravings were gone and so were my sinus issues and I didn’t even know I had sinus issues until I stopped eating cheese. Get ready – TMI – my pms issues cleared up.  I used to wake up in the middle of the night needing to vomit from the pain and all of a sudden -gone!

I decided cheese wasn’t worth going back to and I haven’t looked back.

 

Are Cashews good for you?

 

You bet they are! Just look what Bulletproof.com has to say – A single cashew contains about 21 percent protein, 46 percent fat, and 25 percent carbohydrates. A one-quarter cup serving contains about 200 calories, 5 grams of protein, 9 grams of carbs, and 16 grams of fat. Cashews possess a healthy balance of fat types — 62 percent of the cashew’s fats are monounsaturated fat (MUFAs),  while 18 percent are polyunsaturated fats (PUFAs). While many nuts possess high levels of polyunsaturated fats (PUFAs), which promote inflammation, cashews have relatively low amounts of PUFAs, which limits the imbalance of omega-6’s to omega-3’s you’re exposed to. Due to these MUFAs and PUFAs, cashew consumption leads to lower risk for a variety of diseases – including cancer, obesity, and heart disease.

Spicy Cashew Cheese Sauce

A dairy-free cheese sauce that is spicy and perfect for all your Mexican inspired meals! Its simple to make and will last up to a week in the refrigerator, so you can have healthy nachos any time you want!

Prep Time 5 minutes
soaking time 1 hour
Servings 1 cup

Ingredients

  • 1 cup raw, unsalted cashews
  • 1/2 cup almond milk
  • 1/4 cup nutritional yeast
  • 2 Tbsp lemon juice
  • 1 tsp garlic powder
  • 1 tsp salt
  • 1/8-1/2 tsp chipotle chili powder or 1/2 of a chipotle pepper in adobo sauce
  • 1/8 tsp turmeric

Instructions

  • Place cashews in a medium bowl and cover completely with hot water. Soak the cashews for at least 1 hour. Drain off liquid.
  • Place the cashews and the rest of the ingredients in a blender or food processor and blend until smooth. Enjoy!
