Do you want a delicious dessert that takes minutes to make but tastes like it took all day?

How about an indulgent dessert that doesn't derail all of your healthy hard work?

Does chocolate and mint together sound amazing?

 

If you answered yes, these Mint Chocolate Pots de Creme are for you!

When I weighed nearly 300 lbs, I loved dessert. I still love dessert! The difference is I used to eat 3 or 4 Little Debbie Nutty Bars or Fudge Rounds at one sitting. Now I enjoy healthier desserts like this Mint Chocolate Pots de Creme. It's rich and satisfying, so I don't need to eat more than one serving. When you enjoy quality, whole foods your cravings decrease, so you are satiated.

 

 

Is Chocolate good for you?

 

There are many studies showing the benefits of chocolate, but keep in mind its DARK CHOCOLATE that is beneficial. It may lower cholesterol, prevent cognitive decline and reduce the risk of cardiovascular issues. Find out more health benefits HERE.

 

 

What are the benefits of mint?

 

Mint has one of the highest antioxidant capacities of any food. Using herbs and spices such as mint to add flavor when cooking can also aid in weight loss. When we are focused on weight loss we want our foods to be jam packed with flavor and that's why I choose to add mint to this dessert.  More about mint.

 

I chose to add 1 drop of therapeutic grade Peppermint oil rather than peppermint extract because of the health benefits and concentrated flavor, but you can use extract if you want. Want to know the difference between extracts and essential oils? Click HERE.

These Mint Chocolate Pots de Creme have no cholesterol!

 

They are loaded with fiber, vitamin B, C, E and essential minerals. These healthier Pots de Creme have coconut cream instead of heavy cream.  The fatty acids in coconut cream are metabolized more rapidly by your liver than animal-based saturated fats, which may be more likely to become stored as fat. Mint Chocolate Pots de Creme

These Mint Chocolate Pots de Creme taste so indulgent you won't believe they are dairy and cholesterol free! Only 6 ingredients and so simple to make!

Ingredients

  • 10 oz dark chocolate
  • 15 oz can of coconut cream
  • ¼ cup maple syrup
  • 1 tsp vanilla extract
  • 1 drop peppermint therapeutic grade essential oil or ¼ tsp peppermint extract
  • 1 pinch sea salt

Instructions

  • Melt chocolate over a double boiler or in the microwave. 
  • Place all ingredients EXCEPT the chocolate in a high speed blender and blend until smooth.
  • With the blender on low speed, gradually pour in melted chocolate. Blend until well incorporated.
  • Pour into individual serving bowls or ramekins and refrigerate until chilled, about 4 hours. You can top them with coconut whipped cream, mint leaves and nuts, if desired. Enjoy!

    These look delicious! I have one question -- does the coconut come through? I am not a fan of coconut. Do you have any suggestions for alternatives if it tastes coconutty?

    I am saving the recipe anyway! LOL

      You are safe, because the coconut does not come through. The mint and chocolate shine in this pots de creme.
