You can enjoy this Skinny Caramel Coffee Popsicle without guilt. These frozen treats are naturally sweetened, dairy free, gluten free and vegan. I used dates to create the caramel flavor, so they have the added perk of fiber.

When I weighed nearly 300 lbs, I loved ice cream sandwiches. I could put several away at one sitting.  Now that I have lost weight and watch not only the number of calories I consume, but the type of calorie, I make my own frozen treats.  I dislike the chemicals that are added to most frozen desserts. The great thing about these Skinny Caramel Cofffee Popsicles is the short list of all natural ingredients.

Skinny Caramel Coffee Popsicles

Prep Time 20 minutes
Servings 6 popsicles

Ingredients

  • 6 dates, pitted and soaked
  • 1 cup brewed coffee
  • 1 cup almond milk

Instructions

  • Soak dates in hot water for 15 minutes.
  • Remove dates from water and remove pits, if necessary.
  • Pulse dates in a high speed blender or food processor adding a small amount of hot water to create a paste.
  • Add brewed coffee and almond milk. Pulse for a couple of seconds, just long enough to blend, but not long enough to break down the dates.
  • Pour into popsicle molds and freeze until solid. Enjoy!

These popsicles have only  18 carbs, .5 grams of fat and 1.5 grams of fiber.
