Mexican Chocolate Dairy Free Pots de Creme
When I weighed nearly 300 lbs, I loved desserts and I still do. I believe that if you eat a delicious rich dessert you will be satisfied with a smaller portion and won’t need to eat an entire box of cookies.  I think this dessert is proof.
The chocolaty smell hits your senses first and then, after you take your first bite, the luxurious creaminess engulfs you.

Mexican Chocolate Dairy Free Pots de Creme
Ingredients
- 1 can full fat coconut milk 15 ounce
- 1/4 cup cocoa
- 1/4 cup maple syrup
- 1 tsp vanilla extract
- 1/4 tsp ground cinnamon
- 1/4 tsp ground chipotle
- pinch salt
Instructions
- In a high speed blender, combine all ingredients and blend until smooth.
- Pour mixture into 4 ramekins and refrigerate for 4-6 hours.
- Serve chilled, garnish with shaved chocolate, coconut whip cream or nuts, if desired. Enjoy!

This dessert also has fiber, so its a win! The spicy chipotle heat hits you after your taste buds experience the dense chocolaty flavor. Don’t worry, its not a blow your head off heat, just a slow light burn. You can always leave the chipotle powder out if you are a chocolate purist or a little scared.
