Plus, a touch of sweetness that will make your taste buds happy. This Southern classic cornbread is a cozy, heartwarming treat that is the perfect side to go with your favorite dishes like this Black Bean and Pumpkin Chili Recipe or this White Vegan Chili.

If you like a sweeter cornbread you will like this Dairy Free Cornbread Recipe. It has applesauce for a little extra sweetness.

Before I lost 125 pounds I always made the boxed Jiffy Corn Muffin Mix. I liked how sweet the cornbread muffins were.

Now, that I eat healthier and watch what I put into my body, I skip the box mix and make this eggless cornbread recipe instead. The store-bought stuff has more than 2 teaspoons of sugar per muffin, hydrogenated lard, and BHT. Definitely things that aren’t necessary for delicious cornbread.

Why you will love this eggless version of traditional cornbread

  • Good for Different Diets: An eggless cornbread is great for more people because it works for different diets. It’s good for those who can’t eat eggs, either because of allergies or because they choose not to eat animal products.
  • Healthier Option: Choosing this egg free cornbread recipe might be better for your health. It has less cholesterol and unhealthy fats that come with eggs. This makes it a good choice for people who want a heart-healthy option or just a lighter, vegan version of cornbread that still tastes great.
  • Tasty and Soft: Some might think cornbread without eggs could be dry, but that’s not true! This egg-free cornbread recipe is just as moist and soft as traditional Southern cornbread.

Ingredients for this egg free cornbread recipe

You can find the full recipe card, including ingredient quantities, full step-by-step instructions, and nutritional information below.

  • Yellow Cornmeal – I used medium-grind cornmeal.
  • All-purpose flour – I used all-purpose white flour, but whole wheat flour would work as well. If you want gluten-free cornbread you can use a straight 1:1 ratio.  I haven’t tried it, but let me know if you do.
  • Plant-based Milk– you can use your favorite non-dairy milk like almond milk, oat milk, coconut milk, or soy milk.
  • Apple Cider Vinegar or lemon juice- we’ll use it to make a vegan buttermilk.
  • White Sugar – I used organic cane sugar.
  • Baking powder – This will cause your cornbread to rise and act as an egg replacer.
  • Salt – pinch
  • Vegan butter or oil – I used Earth Balance vegan butter, but you can use avocado oil, coconut oil, olive oil, or any vegetable oil.

  • Preheat the oven to 400 degrees F. Grease a baking pan, muffin pan, or cast iron skillet.
  • Next, make the buttermilk substitute. In a small bowl add the apple cider vinegar to the plant-based milk. Allow it to rest for about 5 minutes. The milk mixture should slightly thicken and split.

Storing Suggestions

To store this cornbread recipe without eggs and keep it fresh, follow these guidelines:

If you plan to enjoy it within a day or two, storing it at room temperature in an airtight container or wrapped in plastic wrap will prevent it from drying out.

For longer storage, place the cornbread in the refrigerator. Make sure to put it in an airtight container or that it’s well-wrapped. When ready to serve, bring it back to room temperature or warm it in the oven for a few minutes.

If you’re looking to store this egg free cornbread recipe for an extended period, freezing is an excellent option. Wrap individual slices or the entire loaf tightly in plastic wrap, followed by aluminum foil or a freezer bag.

To thaw, place it in the refrigerator or let it come to room temperature on the counter. Slicing the cornbread before freezing is also convenient, allowing you to thaw only what you need without compromising the rest.

Remember to let the cornbread cool completely before storing to prevent condensation inside the container and maintain its optimal texture.
