I’ve been working on creating the creamiest potato soup that is full of flavor, and not full of dairy. And this vegetarian potato soup recipe is it! It’s so easy to make in the Instant Pot and you don’t even need to peel the potatoes. I suggest serving this hearty soup with a side salad and a piece of this crusty focaccia bread for an incredible meal.

Before I lost 125 pounds I would open a can of potato soup, enjoy it with several biscuits that I popped out of a can, and top off the meal with a giant soda. I thought I was eating fairly healthy – it was soup after all. 

Now, in my commitment to healthy eating, I’m mindful of what goes into my body in terms of calories and chemicals. So, I make this creamy vegan potato soup and love having it in my back pocket for a quick weeknight meal.

What Ingredients Do You Need to Make this Vegetarian Potato Soup Recipe?

With just a few simple ingredients, you can have this easy potato soup recipe ready in no time! You can find the full recipe card, including ingredient quantities, full instructions, and nutrition information below.

  • Potatoes – you can use almost any type of potato for this recipe, but I think the best potatoes are yukon gold potatoes. However, russet potatoes, or red potatoes are fine and what I had on hand when I photographed this recipe.
  • Vegan Butter – vegan butter adds creaminess, but if you want to cut some calories and fat, feel free to saute the onions in veggie broth.
  • Garlic – I love garlic and like to layer flavor, so I suggest using both minced garlic cloves and garlic powder.
  • Onion – you can use yellow or white, whichever is your favorite.
  • Garlic Powder & Onion Powder – remember, I like to layer, so I suggest both garlic and onion powder to really kick up the flavor.
  • Vegetable Stock – the broth is the backbone of this soup, so make sure it’s a flavorful vegetable broth. I love this homemade vegetable boullion powder with nutritional yeast.
  • Plant-based Milk– you can use your favorite non-dairy milk like almond milk, coconut milk, or soy milk. We are replacing the typically used heavy cream to keep it a creamy soup and make it dairy-free.
  • Flour – all-purpose flour may be used to thicken the soup or you can sub gluten-free flour. If you want to skip the flour altogether you can because the mashed potatoes will keep it somewhat creamy.
  • Black Pepper – for a little spice.

How to Make Potato Soup From Scratch in the Instant Pot

Good news! You can make this simple vegetarian potato soup recipe with just a few ingredients and have healthy homemade soup in a matter of minutes.

Vegan Potato Soup
  • Saute– Turn on the instant pot to saute mode. Add the vegan butter and chopped onion into the instant pot, and saute for 3-4 minutes or until the onion is tender. Next, add in the minced garlic and cook for 1 minute longer.
  • Cook soup– Add the cubed potatoes, broth, garlic powder, onion powder, and pepper to the instant pot, close the lid, and pressure cook for 8 minutes, then quickly release the pressure.
  • Slurry– In a small bowl, stir the non-dairy milk together with the flour making sure to eliminate all lumps.
  • Combine– Once the steam has been released, open the lid and mash the potatoes using an immersion blender or potato masher to create a creamy texture or chunky potato soup, whichever you prefer. Next, add in the slurry mixture and if desired, vegan cheese and mix until combined.
  • Saute– Turn the instant pot back to the saute setting and saute for about 2-3 minutes or until the soup begins to bubble and thicken.

Storing & Freezing this Vegan Potato Soup Recipe

How Do You Store Vegetarian Potato Soup?

Store leftover potato soup in the refrigerator in an airtight container for 4-5 days.

Can You Freeze Homemade Potato Soup?

I do not recommend freezing potato soup. The potatoes break down and become very mushy.

What If I Don’t Have An Instant Pot?

You can still enjoy this recipe by making it on the stovetop instead.

Stovetop Method: In a large pot, over medium heat, add the vegan butter and melt, add the onion, and sauté for 3-4 minutes. Next, add the garlic and cook 1 minute longer.

Next, add the cubed potatoes, broth, garlic powder, onion powder, and pepper and stir together. Bring the mixture to a boil, then reduce the heat to a gentle simmer. Cover the pot with the lid and let it cook until the potatoes are fork-tender. This might take around 15-20 minutes, depending on the size of your potato chunks.

In a small bowl, stir the non-dairy milk together with the flour making sure to eliminate all lumps.

Once the soup is cooked and the potatoes are tender, mash them to your desired consistency with an immersion blender or potato masher.

Next, add in the slurry mixture and if desired, vegan cheese and mix until combined. Cook 2 or 3 minutes longer allowing the soup to thicken. Serve and enjoy!

Is Potato Soup Vegetarian?

No, typical potato soup could have chicken broth. However, this easy soup recipe uses vegetable broth making it acceptable for those with vegetarian or vegan diets. 

Can You Make Potato Soup Without Broth?

Yes, you can use water instead of vegetable broth. It won’t have as much flavor, so I suggest adding salt to taste and doubling the amount of onion powder and garlic powder.
