Before I lost 125 pounds I would eat lots of casseroles that called for condensed soup. Now that I know how much fat, sodium, and chemicals are in the store-bought ones, I make my own.

I decided to create this creamy vegan mushroom soup during the Thanksgiving holiday a few years ago. I needed a cream of mushroom soup for my vegan green bean casserole and a dairy-free mushroom soup is hard to find in the local grocery stores, so I came up with this easy recipe.

As a bonus, this soup is used in my Epic Green Bean Casserole Appetizer recipe, too! It’s incredible!

This dairy-free soup has 40 grams for the entire recipe.

You can substitute approximately 1/4 teaspoon of xanthum gum for the all-purpose flour in order to lower the carbs to 18 grams, but I have not tried it, so I’m not sure how it will turn out. Let me know if you try it.
