Zesty Watermelon Gazpacho

Zesty Watermelon Gazpacho is a slightly sweeter version of the traditional spicy gazpacho. This flavorful chilled soup has a sweet and spicy taste that will catch your attention and leave you refreshed on a hot summer day. It’s also low calorie, low fat, vegan and easy to make!

Zesty Watermelon Gazpacho

 

The first time I ever tried gazpacho was when I traveled to Spain and it was incredible! It was tangy, spicy, salty, so much intense flavor that I fell in love. Since then I have made it many times and altered the recipe nearly every time trying to get the same amazing taste. This version is a play on that delicious gazpacho with which I first fell in love.

When I weighed nearly 300 lbs, I rarely ate fresh vegetables. I typically reached for canned veggies. I especially liked canned white potatoes. I have no idea why, but probably because they are starchy, creamy and processed.  Now that I know better, I eat loads of vegetables, fresh vegetables.  I love the fresh vegetables in this chilled soup. As a matter of fact, I like to add some chopped for crunch instead of pureeing the entire recipe, but you can make it as smooth as you like.

 

If you want it really smooth you could always juice your veggies and watermelon instead of blending them. You won’t have the benefits of all the fiber, but the taste is unbelievably fresh and delicious. Did you know you can juice watermelon rind?! So good!

 

Is it safe to eat watermelon rind? Yes!

Can I eat the white part of  a watermelon? Yes!

Zesty Watermelon Gazpacho

Zesty Watermelon Gazpacho is a slightly sweeter version of the traditional spicy gazpacho. This flavorful chilled soup has a sweet and spicy taste that will catch your attention and leave you refreshed on a hot summer day. It's also low calorie, low fat, vegan and easy to make!

Ingredients

  • 2 cups watermelon
  • 3 large tomatoes
  • 1 small cucumber
  • 1 small poblano pepper, cored
  • 1 small garlic clove, peeled
  • 1/2 small onion
  • 1/4 small serrano pepper optional
  • 1 small bunch cilantro
  • 1- 2 Tbsp apple cider vinegar depending on the sweetness of your watermelon
  • salt and pepper to taste

Instructions

  • Combine all ingredients in a blender or food processor. Puree until the soup reaches your desired consistency.
  • Chill for four or more hours before serving.
  • Serve cold and topped with chopped gazpacho ingredients if desired. Enjoy!
