This vegan butter is fairly solid, so if you are looking for a more spreadable vegan butter be sure to allow it to set at room temperature for a few minutes before using.

- Refined Coconut Oil โ don’t worry; it won’t have a coconut flavor if you don’t use unrefined coconut oil.
- Soy Milk โ you can use unsweetened soy milk, oat milk, almond milk, or whatever plant milk you prefer.
- Neutral Oil โ you can use canola oil, sunflower oil, avocado oil, vegetable oil, or safflower oil. I do not recommend using olive oil since it is so flavorful. You want the oil to have a light taste.
- Vinegar – I prefer apple cider vinegar, but you can also use lemon juice.

- Melt coconut oil: Microwave the coconut oil until it barely melts (avoid getting it hot).
- Mix Ingredients: In a medium mixing bowl, add ingredients and mix with an immersion blender, hand-held blender, blender, or food processor. Blend until well incorporated.
- Freeze: Pour into a glass container and freeze for one hour to allow it to firm up.
- Store: Transfer the vegan butter to the refrigerator and enjoy.
