To make this basic simple vegan cookie recipe you will need –

  • Maple Syrup – go for the real stuff and not pancake syrup.
  • Vegan buttery sticks – you can find these in most grocery stores.
  • Vanilla extract – get the best your budget will allow.
  • Salt – just a pinch to bring out the sweetness of the cookie.
  • Flour – I used all-purpose flour and have not tested any other type of flour.
  • Sugar – I used white sugar, but you could sub monk fruit sweetened sugar if you want to make them sugar-free.
  • Baking Soda – aluminum-free is best.
  • Powdered Sugar – this is optional if you want to dust them after baking. Be sure to use organic powdered sugar otherwise, it might not be vegan since it can be sifted through bone char to make it fine.

How to make Melt in Your Mouth Simple Vegan Butter Cookies

  • Cream the vegan butter and sugar together. In a large bowl, cream the buttery sticks, and granulated sugar together until light and fluffy, about 5 minutes. 
  • Add the maple syrup and vanilla. Mix again until combined. 
  • Stir in the dry ingredients. In the same bowl, add the all-purpose flour, baking soda, and salt until a cookie dough forms.
  • Preheat the oven. These easy simple vegan cookies bake at 300°F. 
  • Scoop your cookie dough. Using a cookie scoop or tablespoon, drop balls of dough onto a parchment paper-lined baking sheet, leaving about 2” between each cookie dough mound. 
  • Bake. Bake these simple vegan cookies for 18-20 minutes, or until lightly browned.  
  • Cool. Transfer from the cookie sheet to a wire cooling rack to cool. Then dust with powdered sugar if you want to take them to the next level!
