Now, that I eat healthier and practice calorie control, I created this epic vegan peanut butter chocolate chip cookie recipe. You can customize it to suit your taste by using almond butter, cashew butter, sunflower seed butter, or adding chocolate chunks instead of chips or chopped nuts for more nutty flavor.

- Peanut butter – You want natural peanut butter. I encourage you to look at the ingredients label and make sure it has simple ingredients – peanuts or peanuts and salt.
- Plant-based milk– you can use your favorite non-dairy milk like almond milk, coconut milk, or soy milk.
- Vanilla extract
- All-purpose flour
- Coconut sugar or brown sugar
- Baking powder
- Baking soda
- Vegan chocolate chips
- Salt

How to Make this Vegan Peanut Butter Cookie Recipe
Good news! You can make these easy peanut butter cookies with just 8 ingredients and have the perfect cookie in minutes.
- Preheat the oven to 350°F (180°C) and cover a cookie sheet with parchment paper
- Mix together– In stand mixer, a large mixing bowl with an electric mixer, or a by hand, mix together the natural peanut butter, coconut sugar, plant-based milk, and vanilla extract.
- Combine Ingredients – add the dry ingredients to the wet ingredients. Add baking soda, baking powder, regular flour, dark chocolate chips, and salt if you’re using it. Stir the ingredients thoroughly until a consistent cookie dough forms.
- Refrigerate – Cover the bowl with plastic wrap and refrigerate the dough for 15 minutes to allow it to firm up.
- Scoop– Using a small cookie scoop or spoon, scoop out balls of dough and place them on the prepared baking sheets, leaving enough space between each for spreading.
- Optional – If you want a boost of sweetness, sprinkle a little regular monkfruit sweetener on top of the cookies. It will give you the crackle appearance that you see in my photos.
- Bake – Bake cookies for approximately 10-12 minutes or until the edges turn golden brown.
- Cool- Remove from oven, allow the cookies to cool on the large baking sheet until they firm up then transfer to a cooling rack.
- Enjoy: Once cooled, enjoy your vegan peanut butter chocolate chip cookies! Store any leftovers in an airtight container for freshness.

Can I Freeze These Eggless Peanut Butter Cookies?
Yes! If you want to store cookies for an extended period, you can freeze them. Place cookies in a freezer-safe container, separated by parchment paper and freeze for up to 3 months in airtight bags. Thaw at room temperature when ready to eat.
If you are not freezing then the best way to keep your peanut butter cookies fresh and maintain their quality, is to store them in an airtight container. This helps prevent moisture from getting in and keeps the cookies from becoming stale. Peanut butter cookies are often fine when stored at room temperature. Keep them in a cool, dry place away from direct sunlight.
Pro Tip: Place a slice of bread in with the cookies to keep them from drying out. Also, do not refrigerate cookies because this can cause them to dry out.
