- 1 pound sweet potatoes (about 2 large)
- 1 can (13.5 oz) coconut milk (full fat)
- 1 cup coconut sugar
- 1/4 cup sugar
- 4 Tbsp cornstarch**
- 1 Tbsp non-dairy butter
- 1 Tbsp molasses
- 2 tsp vanilla extract
- 2 tsp ground cinnamon
- 2 tsp ground flax seeds
- 1/2 tsp ground cloves
- 1/2 tsp ground ginger
- 1 pinch salt
- Prepare the vegan pie crust*. You do not have to pre-cook the crust. Keep it refrigerated until ready to add the filling. You can use a store-bought crust or a gluten-free crust if you prefer.
