These simple sugar-free peanut butter cookies have only 7 ingredients! These cookies are healthy with no eggs, no dairy, no butter, and are sugar free. They are the perfect combo of chewiness and crispness without excessive sugar intake.

Before I lost 125 pounds I always loved cookies of all kinds – chocolate chip cookies, sugar cookies, and definitely classic peanut butter cookies. If I had cookies in the house I would practically inhale them. 

Now, that I eat healthier and practice calorie control, I created one of the best (I think) sugar free peanut butter cookie recipes without butter. You can customize it to suit your taste by using almond butter, cashew butter, sunflower seed butter, or adding chocolate chips or chopped peanuts for a delicious nutty flavor.

How to Make Vegan Sugar Free Peanut Butter Cookies

Good news! You can make this easy sweet treat with just 7 ingredients and have healthy sugar free cookies in minutes. 

  • Preheat the oven to 350°F (180°C). Line two baking sheets with parchment paper. Set aside.
  • Mix together– In stand mixer with a paddle attachment, a large mixing bowl with an electric mixer, or by hand, mix together the natural peanut butter, monk fruit sweetener or your favorite sugar substitute, plant-based milk, and vanilla.

  • Combine Ingredients – add the dry ingredients to the wet ingredients. Add baking soda, baking powder, flour, and salt if you’re using it. Stir the ingredients thoroughly until a consistent cookie dough forms.

  • Refrigerate – Cover the bowl with plastic wrap and refrigerate the dough for 15 minutes to allow it to firm up.
  • Scoop– Using a small cookie scoop or spoon, scoop out balls of dough and place them on the prepared baking sheet, leaving enough space between each for spreading. Using the tines of a fork make a crisscross pattern and flatten the cookie dough. This pattern is optional but it adds a classic look and also helps the cookies bake evenly.

  • Optional – If you want a boost of sweetness, sprinkle a little regular monkfruit sweetener on top of the cookies. It will give you the crackle appearance that you see in my photos.

If you are not freezing then the best way to keep your peanut butter cookies fresh and maintain their quality, is to store them in an airtight container.   • 1 cup natural peanut butter
  • 1 cup all purpose flour
  • 1/2 cup golden monkfruit sweetener
  • 1/3 cup non-dairy milk
  • 1 tsp vanilla extract
  • 1/2 tsp baking soda
  • 1/4 tsp baking powder
  • 1 pinch salt optional
