  • Crumble Crust – Typical cheesecakes call for graham cracker crust, but this crumble crust mixture has pecans, coconut, dates, lime zest, and a pinch of sea salt. You could use cashew nuts or walnuts if you prefer.
  • Creamy Filling – There is no silken tofu, dairy-free cream cheese, or egg yolks in this recipe!  I used avocados, lime juice, maple syrup, coconut oil, and a little more lime zest for the perfect balance of sweet and tangy. 
  • Toppings – This is optional, but I love adding more coconut flakes, nuts, fresh berries, or a drizzle of melted chocolate (dairy-free and vegan) to the top of the cheesecake for more flavor and texture. You could also serve individual slices with a little bit of strawberry sauce and fresh strawberries for a beautiful contrast of colors!

How to make this dairy-free cheesecake recipe

​You can follow these simple steps for this delicious dessert. 

  • Make the Crumble Crust – Process the crust ingredients in a food processor until they become sticky and will hold together if pinched. If necessary, add one tablespoon of maple syrup to get the right consistency.  Press an even layer into the bottom of the springform pan going slightly up the sides of the pan. Place in the freezer while you make the cheesecake filling. 
  • Dairy Free Cheesecake Filling – Process the filling ingredients in a food processor or large mixing bowl with an electric mixer until creamy. With a rubber spatula, scrape the sides of the bowl to make sure all of the avocado is blended and smooth.  Pour the filling into the chilled crust and place back in freezer for at least two hours or overnight. 
  • Serve and Enjoy – For best results, allow the dairy free cheesecake to thaw at room temperature for 10-15 minutes before serving. Be careful not to thaw too long or the consistency will change (still yummy, but more pudding-like).  Garnish with your favorite toppings and enjoy!

How to Store this dairy-free cheesecake

When it comes to storing this specific dairy-free cheesecake, it’s essential to keep it in the freezer rather than the refrigerator.
