Ingredients

Dry Ingredients

  • 1 1/2 cups almond flour
  • 1/2 cup monk fruit sweetener or allulose
  • 1/4 cup coconut flour
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • 1/2 tsp baking soda
  • 1/2 tsp xanthan gum or 1 tsp psyllium husk
  • pinch salt

Wet Ingredients

  • 1 medium-sized banana, mashed
  • 1/4 cup almond milk, unsweetened or your favorite plant milk
  • 2 flax eggs 2 T ground flax seeds + 5 T water
  • 2-4 Tbsp refined coconut oil, melted
  • 1 Tbsp apple cider vinegar
  • 1 tsp vanilla extract
  • 1/2 tsp banana extract

Optional Add-ins

  • 1/4 cup walnuts, chopped
  • 1/4 cup sugar-free dark chocolate chips

Instructions

  • Preheat & Prepare - Preheat your oven to 350°F (175°C). Line a small loaf pan with parchment paper.
  • Make Vegan Buttermilk - Add apple cider vinegar to almond milk and allow to sit for 5 minutes.

  • Make Flax Eggs - Add water to ground flaxseeds and allow to sit for 5 minutes.

  • Mix Dry Ingredients - In a large mixing bowl, whisk together the dry ingredients: almond flour, coconut flour, baking powder, xanthan gum, cinnamon, monk fruit sweetener, and salt.

  • Mix Wet Ingredients -In a separate bowl, mash the large banana and mix with the vegan buttermilk, flax eggs, coconut oil, vanilla extract, banana extract, and monk fruit sweetener.

  • Combine & Bake - Slowly add the wet ingredients to the dry ingredients, stirring until a smooth banana bread batter forms. Fold in chopped walnuts or sugar-free chocolate chips, if using. Pour into the inch loaf pan.
    Bake for 45-50 minutes or until the top of the bread is golden brown and a toothpick inserted in the center comes out clean.
