Ingredients

  • 1 cup almond flour (finely ground)
  • 2 Tbsp tapioca starch optional - arrowroot powder
  • 1/4 tsp baking powder
  • 1/4 tsp sea salt
  • 1 Tbsp flax seeds, ground
  • 2-3 Tbsp water

Instructions

  • Make flax egg: Mix the ground flax seeds and water to make a flax egg and let rest for 5 minutes.
  • Mix the dough: In a medium bowl, combine almond flour, tapioca starch, baking powder, and salt. Add flax egg. Mix until a dough forms — it should be soft but not sticky. Add a little extra water only if needed.

  • Divide and roll: Split the dough into 4 balls. Place one ball between two pieces of parchment paper and roll it out into a thin circle (about 6 inches wide). Carefully peel off paper.
  • Cook the tortillas: Heat a non-stick skillet over medium heat (no oil needed). Place the tortilla on the skillet and cook for about 30–45 seconds on the first side — you might see bubbles or light browning. Flip and cook another 20–30 seconds.
