Naturally Sweetened Energy Bites
Ingredients
- 10 medjool dates, pitted
- 1 cup old fashioned oats
- 1/2 cup nut/seed butter
- 1/4 cup chia seeds
- 1/4 cup unsweetened coconut flakes
- 1/4 cup naturally sweetened dried cranberries
- 1 Tbsp water
- 1 tsp vanilla extract
Instructions
- Soak dates in hot water for 5-10 minutes to soften and set aside.
- Combine oats, chia seeds, and unsweetened coconut flakes to a food processor and pulse until you reach your desired consistency and set aside. Skip this step if you like chunky energy bites.
- Place dates and 1 Tbsp of date water to a food processor and pulse until smooth, scraping down the sides if necessary. Add additional water if necessary.
- Add date paste, nut/seed butter, naturally sweetened dried cranberries and vanilla to oat mixture and stir to combine.
- Form dough into walnut-sized balls.
- Refrigerate in air tight container.

Feel free to skip step # 2 if you like your energy bites a little chunky. I prefer to process mine a little and I think kids like that texture better as well.
Be sure to try other ingredients as well. If you aren’t a cranberry fan put in raisins. Swap the chia seeds for flax seeds, etc. Use your imagination and enjoy!

I like how you leave it open with nut/seed butter. I’m deathly allergic to peanuts. However I can eat all other nuts. So I often eat almond butter instead. I would love to try this recipe with that!

Awesome snack, easy to make and healthy as well. The only thing for me is, I am nut-intolerant, but I can always modify the recipe a little bit to adjust it to my needs. Thanks for sharing this lovely and yummy energy bites 🙂
You might try sunflower seed butter, if you can tolerate seeds. It’s super yummy!

Could you recommend an alternative to the chia seeds? My body doesn’t digest seeds very well.
You could simply leave them out. Sometimes, especially with chia seeds, we need to drink lots of water to help them through our system.
