Before losing 125 pounds, I thought every meal centered around meat for protein.
Now I know better, and I love enjoying beans instead of meat. They’re a great choice overall because they’re high in fiber, plant-based protein, and support healthy digestion—so they fit really well into a balanced, plant-based weight loss diet.
Plus, they tend to have an alkaline effect because they’re rich in minerals like magnesium and potassium.

Pro Tips for Cooking Beans!
💥I recommend seasoning the white beans after cooking. Adding salt to uncooked beans can cause you to feel bloated and gassy.
💥If you are prone to gassiness from eating beans, adding a piece of seaweed—like kombu—when cooking beans is a simple trick to reduce gassiness. Kombu contains natural enzymes that help break down the complex sugars in beans (the ones that cause gas), making them easier to digest.

How to Cook White Beans in Instant Pot
It’s the best way to cook dried beans when you want reliable results.
Step 1: Prep the Beans
Rinse and sort beans before cooking, looking for tiny stones or broken beans.
Step 2: Load the Instant Pot
Add your dried beans and enough liquid to fully cover the beans. You want enough water or broth so the beans are covered by about 2 inches. That’s your safe liquid level.
Step 3: Pressure Cook
Secure the lid and set the release valve to sealing. Use manual mode and set to high pressure for 30 minutes.
Step 4: Natural Release
When the timer beeps, allow a natural pressure release for 15 minutes. After that, carefully turn the valve for a quick release.
You can also use a full natural release if you like a slightly softer bean. This also helps reduce phytic acid and improve digestion.
Step 5: Check Doneness
Open the pressure cooker and test a bean. You’re looking for tender beans with a creamy center. If needed, cook for a few more minutes until you reach your perfect cooking time for your personal preference.
Step 6: Serve & Enjoy
Serve these creamy beans as a great side dish, in white bean soup or white chili, or in a salad. Serve them with warm, crusty bread or this vegan focaccia.
