With this recipe you can choose to use your favorite ones. I have used pecans, almonds and cashews with great success and sometimes all three at once. YUM!

Did I mention this recipe doesn’t call for egg whites? Nope! I completely removed them.

Cinnamon Candied Nuts

  • 3 cups nuts
  • 3/4 cup sugar
  • 1 tbsp cinnamon
  • 1/4 cup water
  • pinch salt optional


  • Bring sugar, water and cinnamon to a boil while whisking it together.
  • Add nuts and salt. Stir constantly.
  • Continue stirring until it seizes up and you just start to smell it roasting.
  • Immediately pour the nuts onto parchment paper and separate with forks. You have to do this quickly or the nuts will stick together.

I have made this recipe using maple syrup, monkfruit sweetener and coconut sugar, all worked well, but I still prefer using organic sugar. The sugared nuts get a dry coating that allows them to stay separate and not stick together. I think that works well as a gift. However, if you want to save even more calories then try the monkfruit sweetener, but pay attention because it won’t take as long to cook. If you haven’t tried it, monkfruit sweetener is zero calories and plant based. Go for it!

    OK so the nuts…………..THEY ARE DELICIOUS! I plan to make some to hand out as a “healthy” alternative to fudge or Christmas cookies.People will still get a sweet taste but not all the SUGAR that is in most holiday dessert! Thanks for sharing the recipe!

    This recipe sounds (and looks) delicious! I love pecan nuts, but I’m also a bit allergic to them. I can only eat one or two before my tongue and lips start swalling and feeling all itchy. I still eat one or two when I can 😉

      Oh no! You can swap out the pecans for another nut, if you’re not allergic to them.

    What do you mean by seizes up?

      I mean the liquid evaporates and the sugar starts to crystallize and harden. It becomes just a little more challenging to stir.
