These Irresistible Apple Pie Protein Cookies are delicious, protein packed and full of apple pie flavor! Best of all these healthy cookies can be whipped up in a few minutes and are naturally gluten free, vegan, dairy free and refined sugar free!

A few weeks ago, I received a request from the local television station to create a healthy back to school recipe. I don’t consider myself an expert on kids food, but I do know weight loss and healthy eating. So, I created these filling, yet low calorie apple pie protein cookies. I believe kids will love them (they can eat these cookies for breakfast!) and I believe you will love them as well.

The first batch I made were way too moist, because of the apples and applesauce, so I increased the cooking time. However, the next batch I cut back on both ingredients, lowered the oven temperature and cooked them for a longer amount of time and it worked wonderfully.

If so, you will enjoy these protein cookies. You won’t believe how easy they are to make and have a short ingredient list. I love them for breakfast! I eat 3 with a glass of almond milk and it keeps me satisfied for hours.

 

It’s like having a bowl of oatmeal topped with juicy apples and spicy cinnamon. Best of all they are low calorie and high protein and fiber, so they are perfect if your goal is weight loss.

Unlike traditional cookies, these don’t contain any butter, oil, flour or granulated sugar! They are loaded with protein and wholesome carbs to keep you satisfied for hours.

 

Let’s talk protein powder. Depending on the type you use (I recommend this vegan protein powder or this plant based protein powder), they are completely vegan, gluten free, refined sugar free and dairy free! I have tried many types of protein powders, everything from whey to egg whites, and these two taste good and blend well. I also believe that plant based protein powders are easily digested versus whey powders. Whey protein has a tendency to cause bloating and belching.

Irresistible Apple Pie Protein Cookies

Chewy, moist and utterly satisfying apple pie protein cookies. They are quick to make with very few ingredients and make a great healthy snack or breakfast.

Ingredients

  • 1 cup applesauce
  • 1 cup oats old fashioned and gluten free
  • 1 apple diced
  • 1 scoop vanilla protein powder plant based
  • 2 Tbsp nuts chopped
  • 1 tsp chia seeds
  • 1/2 tsp vanilla extract
  • 1/2 tsp cinnamon
  • 1/4 tsp cloves ground
  • pinch salt

Instructions

  • Preheat the oven to 325 degrees.
  • Line a cookie sheet with parchment paper or grease cookie sheet and set aside. 
  • In a medium mixing bowl, combine applesauce, oats, apple, vanilla, spices, chia seeds, nuts and protein powder. Mix until protein powder is well incorporated. 
  • Drop a tablespoonful and press it down onto the prepared baking sheet, continue and space them about 2" apart. A cookie scoop works well here. 
  • Bake 20 minutes or until golden brown.

I love this cookie scoop! I don’t know about you, but I get messy enough in the kitchen and this scoop helps me stay clean a little longer. I just scoop and then flatten the cookie to make sure it cooks evenly.
