One of my favorite things is spring rollsalso known as Vietnamese Summer rolls. I love dipping them into this healthy peanut sauce recipe because it’s the perfect complement to the crunchy filling ingredients and rice noodles. 

But you don’t have to limit yourself. This versatile sauce can be drizzled over potatoes, salads, power bowls, or noodles. It’s also a good dip on an appetizer tray with fresh vegetables.

Before I lost 125 pounds, I had never tried anything more adventurous than meat and potatoes. Now that I have lost weight and “Intentionally Eat,” I eat a vegan diet, so I discovered Thai restaurants and Vietnamese restaurants and love the food. I always order fresh rolls and love dipping them in spicy peanut sauce. I decided to make my own authentic Vietnamese peanut sauce recipe, which you will love.
